Priprema domaćeg kruha uvijek je mali izazov ali i veliki gušt.
Kada sami radimo svoj kruh, uvijek možemo kombinirati razne vrste brašna, mijenjati omjere, formirati različite kruščiće i po želji ih dodatno ukrasiti. Možemo kruh staviti u pletenu košaru, da se u njoj diže, tako će nakon pečenja na njemu ostati lijepi trag uzorka s košare ali možemo i nožem zarezati kruh po površini i tako svaki kruščić učiniti posebnim, jedinstvenim.
U hladnu pećnicu dobro je staviti jedan veći, dublji lim u kojeg kasnije, kada se pećnica ugrije i kada stavljamo peći naš kruh, ulijemo hladnu vodu ili stavimo kockice leda. Vodena para koja će nastati spriječit će pucanje kruha, kora na našem kruhu bit će bolja a boja ljepša.
Sastojci:
150 g raženog brašna tip 1250
220 g pšeničnog brašna tip 400
1 žličica soli
1 žličica meda
1 žlica maslinovog ulja
1 žličica suhog kvasca
1 žličica šećera
220 ml tople vode
Priprema:
U manju zdjelicu stavite suhi kvasac, dodajte šećer i malo tople vode pa dobro promiješajte i ostavite 10 minuta na toplom mjestu.
U veću posudu stavite raženo i pšenično brašno, dodajte sol i promiješajte. U sredini rukom napravite udubinu pa dodajte pjenicu (kvasac), ulje, med i ostatak tople vode. Miješajte dok se sastojci ne sjedine (po potrebi možete dodati još malo brašna ili malo vode), a zatim tijesto izvadite na radnu površinu i mijesite nekoliko minuta, dok ne postane elastično.
Tijesto formirajte u kuglu i stavite u posudu koju ste premazali s malo ulja. Pokrijte i ostavite da se diže. Nakon 15 minuta tijesto malo premijesite (ne treba ga vaditi iz posude), opet pokrijte prozirnom folijom ili velikom zdjelom, i ostavite da se diže na toplom mjestu oko 40 minuta.
Lim za pečenje obložite papirom za pečenje i na sredinu pospite malo brašna.
Tijesto izvadite na radnu površinu, premijesite i formirajte u željeni oblik, stavite u pripremljeni lim za pečenje i poklopite posudom u kojoj se tijesto dizalo. Ostavite tako 30 minuta.
Na dno pećnice stavite jedan veći prazni lim (za vodu).
Pećnicu zagrijte na 240°C.
Maknite posudu s kruha, lagano ga pospite brašnom pa oštrim nožem zarežite po površini.
Stavite kruh u zagrijanu pećnicu na srednju rešetku. U donji prazni lim ulijte čašu hladne vode (a dobro će poslužiti i kockice leda ;)).
Smanjite temperaturu na 200°C i pecite kruh oko 20 minuta. Ako kruh prebrzo tamni, treba ga pokriti i zaštititi papirom za pečenje.
Provjerite je li kruh pečen i s donje strane, donja korica bi trebala biti čvrsta a kad ga kucnete trebalo bi zvučati šuplje. Ako nije pečen, izvadite kruh iz lima i vratiti ga u pećnicu, stavite ga na žicu i pecite još par minuta.
